Menu Engineering Matrix
A 2x2 view that plots every menu item by popularity (units sold) against profitability (margin), so you can see at a glance which items pull their weight.
The four quadrants
- Stars — High popularity, high profit. Protect and promote them.
- Plowhorses — High popularity, low profit. Re-engineer the recipe or raise the price slightly.
- Puzzles — Low popularity, high profit. Worth promoting harder or repositioning on the menu.
- Dogs — Low popularity, low profit. Candidates for removal.
Items inherit margin data from the food-cost field you set per item. Items missing a food cost are flagged so you can complete the data.
