Menu Engineering Matrix

    A 2x2 view that plots every menu item by popularity (units sold) against profitability (margin), so you can see at a glance which items pull their weight.

    The four quadrants

    • Stars — High popularity, high profit. Protect and promote them.
    • Plowhorses — High popularity, low profit. Re-engineer the recipe or raise the price slightly.
    • Puzzles — Low popularity, high profit. Worth promoting harder or repositioning on the menu.
    • Dogs — Low popularity, low profit. Candidates for removal.

    Items inherit margin data from the food-cost field you set per item. Items missing a food cost are flagged so you can complete the data.
